Mix chopped fenugreek leaves, whole wheat flour, besan, and spices to form a soft dough, shape into small cylindrical muthias, and fry or steam them until cooked.

Prepare the green masala paste by combining grated coconut, cilantro, green garlic, ginger-chili paste, roasted peanuts, sesame seeds, sugar, lemon juice, and salt.

Stuff the slit baby eggplants and potatoes generously with a portion of the green masala mixture.

In a heavy-bottomed pan or traditional pressure cooker base, heat oil and add carom seeds and asafoetida.

Layer the vegetables, surti papdi, stuffed eggplants, potatoes, purple yam, and raw bananas along with the remaining green masala.

Cover and cook on low heat, or pressure cook for a few whistles, ensuring everything is tender and well-infused, then gently fold in the fried muthias before serving.
