Instructions

  1. Heat olive oil or ghee in a large heavy-bottomed pot over medium-high heat. Add the meat chunks and sear on all sides until well browned. Remove the meat and set aside.

  2. In the same pot with the remaining fat, add the chopped onions and sauté until golden brown. Add the minced garlic and grated ginger, cooking for another 1 minute until fragrant.

  3. Stir in the tomato paste, pureed tomatoes, and all the spices (cumin, coriander, turmeric, paprika, cinnamon, cardamom, salt, and pepper). Cook for 3-4 minutes until the tomatoes darken slightly.

  4. Return the seared meat to the pot. Add the dried black lemons and pour in the water or broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 60 minutes until the meat begins to tenderize.

  5. Add the potatoes, carrots, pumpkin, zucchini, and chickpeas to the pot. Cover and continue to simmer for another 25-30 minutes until the vegetables are tender and the meat is fall-apart soft. Adjust salt if needed.

  6. Arrange the torn flatbread pieces in a large, deep serving platter. Ladle the hot, flavorful vegetable and meat broth generously over the bread until it softens and absorbs the liquid. Top with the meat and vegetables, and serve hot.
